This series enzyme plays a crucial role in the distillery industry, particularly in the production of alcohol from starch-based raw materials. Its primary function is to break down complex carbohydrates (starches) into simple sugars, mainly glucose.It is used for the saccharification process in the industry of grain processing, alcohol, distillate spirits, beer brewing, organic acid, sugar and antibiotics

The endo-glucosidase in the glucoamylase hydrolyzes the α-1,4 and α-1,6 glycosidic bonds in starch, converting dextrins into glucose and into fermentable sugars, which are then converted by dry yeast during the fermentation process
