Saccharification
Introduction
It plays a vital role in starch processing and sweetener production. Its main function is to catalyse the hydrolysis of starch, breaking down complex polysaccharides into simpler sugars. Specifically, it cleaves the α-1,4 and α-1,6 glycosidic bonds in starch, releasing glucose molecules.
In the production of sweeteners like high-fructose corn syrup and glucose syrups, glucoamylase converts liquefied starch into glucose. This glucose can then be further processed, for instance, isomerised into fructose to produce high-fructose syrups, commonly used in the food and beverage industry for their sweetness and stability.
